Even back then, Sebastian Kneipp was all about fresh, unprocessed ingredients and regional products. Today, this principle is in vogue under the term “clean eating.” The key is to include as much fruit and vegetables as possible in your diet and as few industrially manufactured products as possible. Healthy cooking does not mean sacrifice: it often allows you to discover and appreciate the flavors of herbs, the taste of fresh vegetables, and the individual ingredients.
A healthy, balanced, and natural diet has a direct impact on your well-being. Our kitchen is there to pamper you and create new culinary experiences. We want you to feel completely at ease even after your meal. And while dining in our restaurant, enjoyment, pleasure, a peaceful atmosphere, and time to savor your meal are just as important as healthy ingredients and fresh herbs.

This was also one of Kneipp's nutritional principles. However, this does not mean completely avoiding meat or following a vegan diet. We do strive to reduce the amount of animal products we serve and recommend that our guests have a vegetarian day every now and then. Of course, we also offer a vegetarian option with plenty of fresh vegetables from the region and herbs from our own garden with every meal.
